Classic Belgian Waffles

Crisp outside, fluffy inside, with deep pockets made for maple syrup. This is the weekend waffle recipe I've tweaked to perfection.
Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes
Servings: 4 waffles

Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder or 1 tsp yeast for traditional version
  • 1/2 tsp salt
  • 2 large eggs yolks and whites separated
  • 1 3/4 cups milk warm if using yeast
  • 1/2 cup melted butter
  • 1 tsp vanilla extract

Equipment

  • Belgian waffle iron

Method

  1. In a large bowl, whisk flour, sugar, baking powder (or yeast), and salt. In another bowl, whisk egg yolks, milk, melted butter, and vanilla. Combine wet and dry ingredients gently.
  2. Beat egg whites until stiff peaks form, then fold into the batter to keep it airy.
  3. Preheat the waffle iron until fully heated for even cooking.
  4. Pour batter into the iron, close, and cook for 4-5 minutes until golden brown.
  5. Serve immediately dusted with powdered sugar, drizzled with syrup, or topped with fruit, whipped cream, or Nutella.
